By Nolan D’Eon, the D’Eon Oyster Company was established in 1996. Nolan had spent his entire working life at sea and was always looking forward to returning to his family. He sold his boat and licence after realising that lobster fishing wasn’t what he intended for his children or himself in the future. For more than 15 years, he had observed wild oysters develop in Eel Lake’s brackish waters, so he was aware of the enormous potential that was there in his backyard. He decided to get into oyster aquaculture headfirst despite having no prior experience of it. Nolan was focused on inventing something that had never been done before.
