Dillon‘s aim is to create new spirits from old concepts, one small batch at a time, with unsurpassed quality. We are a bunch of individuals who are passionate about what we do. We’re passionate about making genuine spirits and, as a result, genuine, spirit-and-ingredient-forward cocktails. It’s simple when you know what you enjoy. And we prefer to keep things basic since it allows us to create the delightfully complex spirits we are known for. We prefer to use the highest-quality ingredients. That is why, on the Niagara Peninsula, we distil some of the best vegetables in Canada. We are interested in learning more about the individuals who farm the ingredients that go into our spirits. That way, we can be sure it’s good. We prefer to use 100 percent rye. We’re from Canada. That is the reason.
